Critical Corrected During Inspection Observed dishes that were still dirty stored in the dish drying area above the 3-bay sink. PIC put the dirty dishes in the 3-bay sink during the inspection to be rewashed. Equipment food-contact surfaces or utensils are unclean.

Critical Repeat Corrected During Inspection Observed some of the chicken on a tray in one of the warmers with internal temperatures below 135°F. PIC removed the chicken from the tray during the inspection to be discarded. TCS foods not being hot held at the proper temperature.

Repeat Observed a build-up of debris on the walk-in cooler racks, on a freezer gasket, inside the hot holding units, on the shelving used for dish drying above the 3-bay sink, inside the oven, and on the top part of the french fry warmer. Non-food contact surfaces of equipment are unclean.
