Critical Repeat Corrected During Inspection Observed build up in the ice machine. PIC turned it off to empty the ice and clean it during inspection. Equipment food-contact surfaces or utensils are unclean.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Observed chili made on 3/15 in the walk in cooler without date marking. PIC dated it. Refrigerated, ready-to-eat, TCS foods not properly date marked.

Did not observe a thermometer in the walk in cooler. Food thermometer not readily accessible.

Facility has new Kolpak walk in cooler/freezer combo located outside of the facility that was just installed. Information for the unit was provided to look for spec sheet.
I - P - Employee Health: The operation had an employee health policy on file.
VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Observed chili made on 3/15 without date. PIC dated it.
VII - Protection from Contamination: Equipment food-contact surfaces or utensils are dirty. Observed build up in the ice machine. PIC cleaned it.
