Critical Corrected During Inspection Observed a bag of cracker meal open in the storage room. PIC closed the bag back up as it was just being used. Food not properly protected from contamination by separation, packaging, and segregation.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed multiple items in the front fridge unit by the grill to be out of temp. PIC discarded all items in the unit (mac&cheese, broccoli, corn, cheeses, egg whites) TCS foods not being cold held at the proper temperature.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed a bag of cheese in the grill refrigerator not date marked. Employee had ust placed the cheese in there and put a date on it for me. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Observed grill scrapers that had knicks on them and plastic lids that had cracks. These are no longer easily cleanable and will need to be removed. PIC discarded items. Food contact surfaces not easily cleanable.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Observed the front grill line fridge to be out of temp. PIC placed a work order for the unit. Inadequate equipment available for cooling, heating or holding food.

Did not observe thermometers in the stand up grill refrigerators. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Repeat Observed clean plates not being inverted to prevent contamination. Clean equipment and utensils not stored in a self-draining position and covered or inverted.

Observed the front grill fridge unit to have a torn gasket. PIC placed a work order for the piece to be fixed. Equipment components are not intact, tight or properly adjusted.

Observed the cappuccino machine to have build up inside. Non-food contact surfaces of equipment are unclean.
