Critical Corrected During Inspection Observed milk in cooler with no lid on it during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC removed container during the time of inspection.

Critical Corrected During Inspection Observed food utensil hung up to dry to be dirty during the time of inspection. Equipment food-contact surfaces or utensils are unclean. PIC placed it in area to be washed during the time of inspection.

Critical Corrected During Inspection Observed ice machine to have debris on the food contact portion during the time of inspection. Equipment food-contact surfaces or utensils are unclean. PIC cleaned ice machine during the time of inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed everything sauce and re-hydrated onions being held at room temperature with no time as a public health control stamp or procedure in place during the time of inspection. TCS foods not being cold held at the proper temperature. PIC disposed of both items during the time of inspection and discussed that facility would begin keeping these items held at 41 degrees or lower rather than keeping them at room temperature during the time of inspection.

Critical Repeat Corrected During Inspection Observed container with everything sauce to have a date mark of 8/22, thus being held past its disposition date during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC disposed of it during the time of inspection.

Observed hand sink in kitchen area to not be able to supply hot water during the time of inspection. Handwashing sink water below 100°F.

3717-1-06.1(M) / Outer openings - protected.
Observed door sweep on back exit door to be damaged during the time of inspection. Outer opening not protected.

3717-1-03.2(M) / Wiping cloths - use limitation.
Observed several wiping cloths throughout the facility to not be stored in sanitizer buckets during the time of inspection. Improper use and/or maintenance of wiping cloths.

Observed items on drying racks in warewashing area to not be stored in an inverted fashion during the time of inspection. Clean equipment and utensils not stored in a self-draining position and covered or inverted.

Observed three bay sink to have damaged caulk during the time of inspection. Fixed equipment not properly sealed or spaced for cleaning.
