[?] A summary of the violations found during the inspection are listed below.

3717-1-02.1(A) / Employee health reporting
Critical Employee Illness Policy does not include the 13 food borne pathogens listed in OAC 3717-1-2.1 (A)(2). Please update policy to include all of those pathogens.
To prevent the transmission of foodborne illnesses, the license holder shall require food employees and conditional employees to report to the person in charge information about their health as it relates to diseases that are transmissible through food.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Observed improper use and/or maintenance of wiping cloths. There were a couple of wiping cloth buckets that did not have any detectable sanitizer available.
Cloths that are in use for wiping counters and other equipment surfaces shall be: (a) held between uses in a chemical sanitizer of the appropriate concentration. This will prevent the growth and spread of microbes onto food contact surfaces.
