Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed pepperoni in the upstair kitchen and several food items in the downstair kitchen (pulled chicken, cooked ground meat, hot dof, shredded cheese and cut onions) withoud date marking.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed shredded cheese and bacon date marked on 9/14 still in the upstair kitchen. Had PIC discard them.

Food thermometer not readily accessible. Observed no thermometer in the upstair cooler.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment not approved by a recognized testing agency. Observed the use of non commercial equipment in the upstair and downstair kitchen (whirlpool freezer/fridge and microwaves).

No sanitizer test kit available. Observed no test kit in the upstair and downstair kitchen.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed debris in the pizza oven in th upstair kitchen.

3717-1-06.4(F) / Drying mops.
Observed mops dried improperly in the downstair kitchen. Mop must be hanging to allow drying.
