[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical Corrected During Inspection PIC explained dishwashing process, but did not include sanitizing. Explained to PIC that dishes need to be washed, rinsed and sanitized. PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters.

3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Corrected During Inspection Observed a pair of tongs sitting on the counter that were used to grab food from oven. PIC stated they are cleaned once a shift. I went over with him that in use items need to be cleaned every 4 hours. Food equipment surfaces not cleaned at required frequency.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed multiple items in the fridge to not have a date mark stamp. Cheeses, meats, philly meat, etc. PIC went through and discarded items that did not have a known date and dated those that could be date marked. Refrigerated, ready-to-eat, TCS foods not properly date marked.

Repeat Facility does not have an employee with manager certification in food protection.

3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Repeat Observed the 3 bay sink needing caulked. Fixed equipment not properly sealed or spaced for cleaning.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed a torn gasket on the freezer in the back room. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(2) / Cleanliness of food-contact surfaces of cooking equipment and pans.
Observed the walk in fan covers to have build up. Cooking equipment or pan surfaces unclean.

3717-1-05.4(F)(1) / Outside receptacles - tight fitting lids
Observed the dumpster lid open at the time of inspection. Outdoor refuse containers without tight fitting lids, doors, or covers.
