Critical Corrected During Inspection Observed TCS foods above 41°F in the prep cooler. PIC stated the prep cooler had recently been filled. During the inspection, the PIC moved the food items to another cooler that was keeping food temperatures below 41°F. PIC was advised not to use the prep cooler until it had been repaired. TCS foods not being cold held at the proper temperature.

Repeat Observed the paper towel dispensers at the handwashing sinks to be empty. No towels or drying device at the handwashing sink(s).

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed build-up of debris on the walk-in freezer floor, inside the stand-up freezer, on freezer gaskets, on the bottom of the soda machine, on the slushi machine, and inside the stand-up warmer. Non-food contact surfaces of equipment are unclean.
