3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Did not observe lids on cooler and freezer items during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC placed lids on items during the time of inspection.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Did not observe mechanical dishwashing machine to be correctly sanitizing dishes during the time of inspection. Chlorine sanitizing solution at incorrect temperature and/or concentration. PIC said dishes would be hand washed until machine is fixed during the time of inspection.

3717-1-06.2(B) / Handwashing cleanser - availability.
Did not observe soap at the hand sink near the 3 bay sink during the time of inspection. No soap at handwashing sink(s).

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Did not observe hand drying device at hand sink near the 3 bay sink during the time of inspection. No towels or drying device at the handwashing sink(s).

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection Observed thawing foods to be submerged in water under 70 degrees with no running water during the time of inspection. TCS foods not properly thawed. Employee turned water on so there was a constant running flow of water with sufficient water velocity to agitate and float off loose particles in an overflow during the time of inspection.

Repeat Observed torn gaskets on walk-in cooler and True cooler in cooking area during the time of inspection. Equipment components are not intact, tight or properly adjusted.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed bathroom handsink to not be sealed to the wall during the time of inspection. Floor and wall junctures not properly coved or closed and/or floor drains not provided.
