Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed dust accumulation inside the ice machine. PIC had an employee clean it.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed ham in the walk in cooler that was not date marked. PIC voluntarly discarded it.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed chicken salad in the walk in cooler that was supposed to be discarded by 4/14. PIC voluntarly discarded it.

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Food thermometer not readily accessible. Did not observe a thermometer inside both walk in coolers and in some reach in coolers.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed opened box of cookies and several food items on the floor underneath the shelves in the walk in freezer. PIC discarded them.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up inside the microwave in the kitchen, build up inside the dish sprayers in the dish room, build up on the vents cover and ceiling around the vent cover of the walk in coolers and also observed the walk in freezer floor needing sweeping.

VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required. Observed chicken salad date marked for 4/14 that was not discarded. PIC discarded it.
VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Observed an opened bag of ham that was not date marked. PIC discarded it.
