Critical Repeat Corrected During Inspection Observed pizza a little below 135°F in the pizza warmer. The pizza was recently prepared, so the PIC turned up the temperature on the warming unit during the inspection to keep the pizzas at 135°. PIC will also discard the pizza 4 hours after preparation. TCS foods not being hot held at the proper temperature.

Critical Corrected During Inspection Observed TCS foods above 41°F in the deli sandwhich cooler. PIC removed all TCS foods from the cooler during the inspection for disposal. PIC was advised not to use the cooler for TCS foods until the unit has been repaired. TCS foods not being cold held at the proper temperature.

Observed deteriorated caulk around the hand sink and 3-bay sink. Fixed equipment not properly sealed or spaced for cleaning.
