Critical Observed dishwasher not meeting the required sanitizing level at the time of inspection. Informed PIC to use the three bay sink in the mean time and to fix machine to dispense proper concentration of sanitizer. Warewashing machine does not automatically dispense detergent sanitizer and/or does not have a visual means to ensure detergent and sanitizer is automatically dispensed.

Observed light coming through the back door fram junction at the time of inspection. PIC stated they had just done some repair on the door and are putting a new seal on soon. Outer opening not protected.
3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed no covers on two buckets of food in the walk in cooler at the time of inspection. PIC placed lids on them. Improper storage of food items.
3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Observed to go boxes not inverted to protect from contamination. PIC flipped them over. Single-service and single-use articles not protected from contamination.
