Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed several food items (cheese, lettuce leaves, ham, bologna...) without date marking in both refrigerators in the kitchen. PIC date marked them.

Food thermometer not readily accessible. Did not observe a thermometer inside both refrigerators in the kitchen.

Repeat Equipment not approved by a recognized testing agency. Observed the use of non commercial equipment (refrigerator/freezer, microwave...).

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed food debris inside the gasket of the coolers below the fryer in the kitchen.
