[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed Rasberry Puree at 48 degrees, Peach Puree at 49 degrees, and cut fruit at 53 degrees in the bar cooler at the time of inspection. PIC discarded TCS foods that were held out of temperature at the time of inspection. TCS foods not being cold held at the proper temperature.

3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical PIC said mechanical dishwasher was not dispensing soap properly and fluctuated in temperature. PIC explained he put in a work order and they were supposed to do maintenance that day. They do have a 3 bay sink to use in the mean time. Improper temperature of wash solution in mechanical warewasher.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Observed chilled bowls in cooler with condensation and ice build up on food contact serfaces. PIC removed contaminated bowls for immediate wear washing. Food not protected from contamination.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Corrected During Inspection Observed bar cooler with temperatures at 54 degrees. PIC turn down the thermostat to reach proper temperature. Equipment components are not intact, tight or properly adjusted.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed no sanitizer and test kit for 3 bay sink at the time of the inspection. No sanitizer test kit available.
