Critical Corrected During Inspection Observed the mechanical dishwasher dispensing chlorine sanitizer below the approved concentration level during the inspection. PIC was able to troubleshoot the issue during the inspection and get the dishwasher to dispense sanitizer within the approved concentration levels. PIC will use time as a public health concern and discard the shredded cheese 4 hours after it was removed from temperature control. PIC was advised during the inspection to discontinue using the cold well until it has been repaired. TCS foods not being cold held at the proper temperature.

Observed a build-up of debris on the top part of the fry warmer and on the meat cooler and fry freezer gaskets. Non-food contact surfaces of equipment are unclean.
