Critical The person in charge did not ensure that employees were effectively cleaning their hands as required. All trash cans have lids on them in order to dry washed hands you must touch the trash lid to dispose of paper towels.
To prevent contamination, the person in charge shall ensure that employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.

Exhaust ventilation hood systems are not designed to collect grease or condensation. Exhaust ventilation hood for open kettles is not removing condensation from overhead the kettles.
Exhaust ventilation hood systems in food preparation and warewashing areas shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, etc.

An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
