3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed the cooler in the kitchen not working properly an holding foot items at 64F. PIC discarded all food items and put in a work order to have it fixed. No food items shall be stored in the cooler until fixed. TCS foods not being cold held at the proper temperature.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection Observed no towels or drying device at the handwashing sink in the kitchen. PIC some paper towel by the sink.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed the cooler in the kitchen not working properly. Temperature in the cooler was 64F. PIC discarded all food items in the cooler and called maintenance duing inspection to have him come an take a look. No food items shall be stored in the cooler until fixed. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed build up and debris at the bottom of the prep tables and on the door handle of the hot holding unit. Non-food contact surfaces of equipment are unclean.

Comments
Observed the ice machine lid was not replaced. PIC stated they ordered the wrong one and sent it back to be replaced.
Observed one of the keg cooler not being used. PIC stated it is not working and they are waiting for a new one to replaced it. The same make and model number cooler will be replaced.
A follow inspection will be conducted to check the cooler in the kitchen and make sure it is holding food at 41F or below. PIC will contact the Health Department when the cooler is fixed for a reinspection.
