Critical Corrected During Inspection Observed log of smoked ham in the handsink in the upstairs kitchen area at the time of inspection. PIC had removed it by the time inspection was over. Handwashing sink not accessible.

3717-1-03.4(B) / Time/temperature controlled for safety food - slacking.
Corrected During Inspection Observed frozen log of ham in the handsink at the time of inspeciton and bag of sliced ham in the stagnant middle compartment of the three bay sink. Informed PIC of proper thawing procedures and they complied to follow the proper procedures. Food improperly slacked.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed torn gasket on the upright berg freezer at the time of inspection. Equipment components are not intact, tight or properly adjusted.
