3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed TCS foods cold stored at about 48F in the make table next to the grill. PIC stated temperatures were taken in the morning (less than 4 hours ago) and were at 41F or below. Temprature log showed the grill cooler air temperature was at 39.7F between 6:30-7:30AM. PIC moved all food items at the bottom of the cooler into another cooler and put ice packs underneath containers of food stored on the top of the food.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed the make table in the kitchen next to the grill not working properly at the time of inspection. Observed accumulation of water at the bottom of the cooler and the temperature of the foods in the cooler was about 48F. PIC submitted a work order to have the cooler checked.

Complainant stated the facility has trash all over the kitchen, buns were dropped on the floor and put back on the grill to cook, cheese is layed in a greasy area on the counter top and then served.
We went to the facility and talked to the PIC about the complaint. Did not observe trash all over the kitchen floor, buns being drooped on floor and pick back up for using and cheese sitting in greasy area on the counter top at the time of inspection. Observed cheese being stored inside the make table next to the grill at the time of inspection. Also observed the make table was not properly working at the time of inspection. Reviewed proper disposition of unsafe food with PIC. Also reviewed proper cold holding of cheese and TCS foods with PIC. No violation regarding the complainant statement was observed at the time of inspection. Violation cited on this report was observed while investigating the complaint.
