Critical Corrected During Inspection Observed food in the handwashing sink at the server's station during the time of inspection. Handwashing sink is being used for purposes other than handwashing. PIC cleaned the sink and reminded her that these sinks are only for washing hands.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed several items in the stand up freezer and the cooked bacon to not have lids during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC placed lids on the items.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed items in the walk-in cooler to have no date mark with no information on when they were placed in there. Refrigerated, ready-to-eat, TCS foods not properly date marked. PIC discarded of the items.

Critical Corrected During Inspection Observed several items in the walk-in cooler and the server station cooler to be past their disposition date during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC removed them and threw them away.

Corrected During Inspection Observed wiping cloths to not be stored in sanitizer bucket during the time of inspection. Improper use and/or maintenance of wiping cloths. PIC placed them in bucket.

Observed plates to be used for salads to not be inverted during the time of inspection. In-use utensils improperly stored. PIC removed them to have them cleaned.

Repeat Observed debris on the gaskets of the walk-in coolers and the stand up freezer and stand up cooler during the time of inspection. Non-food contact surfaces of equipment are unclean.
