Critical Corrected During Inspection Observed some recently prepared food items slightly below 135°F in two warming units. PIC adjusted the temperature settings on the warming units. The food items were recooked to the proper temperature. TCS foods not being hot held at the proper temperature.

Critical Corrected During Inspection Observed some sliced american cheese packets above 41°F that were being stored on an ice pack. PIC removed the american cheese packets accordingly and was advised to adjust the cold holding method for the cheese. TCS foods not being cold held at the proper temperature.

Corrected During Inspection Observed two mops that dried in the mop sink. PIC hung up the mops during the inspection. Mops dried improperly.
