Critical Observed one of the handwashing sinks with visible food debris and a scratch pad being stored inside. Handwashing sink is being used for purposes other than handwashing.

An irreversible registering temperature indicator (thermometer or labels) was not readily accessible in hot water mechanical warewashing operations.

Corrected During Inspection Observed to go containers, clean plates and dishes not properly inverted to help prevent contamination. Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored.

Observed missing floor tiles in the walk-in cooler. Floors, walls, and/or ceilings were not smooth and easily cleanable.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
3717-1-06.1(I) / Light bulbs - protective shielding.
Repeat Observed light bulbs not peroperly shielded or coated where required in the kitchen.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Obsered some build-up of food on the ceiling in the kitchen. .
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
