Corrected During Inspection Observed missing thermometer in the walk in cooler at the time of inspection. PIC placed one in the unit. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Observed torn gasket on the upper door of the Lockwood bread holder at the time of inspection. Equipment components are not intact, tight or properly adjusted.

Observed fan vent covers in the back prep area with an accumulation of dust at the time of inspection. Non-food contact surface(s) not cleaned at the required frequency.
