Critical Corrected During Inspection Written procedures and plans are not maintained and implemented. Observed food items (pot raost, romaine lettuce, cut canteloupe) that were not discarded when required. Facility date marked some food items for less than 7 days and were not following their own procedure by discarding food items when required. Reviewed proper date marking and disposition with PIC.

Complainant stated eating pot roast melt sandwich and salad mix at this facility on 10/10 and started feeling ill 15-20 min later.
Talked to the PIC about the complaint. PIC stated not receiving the complaint or any other complaint regarding the pot roast melt sandwich and salad mix. PIC stated pot roast comes frozen and precooked, is thawed in the walk in cooler, then cut and date marked for 3 days. When ordered, pot roast is mixed with onions and mushrooms, heated for 3 min in the microwave and put on the grill to cook at 165F or above. It is then put on a grilled cheese sandwich. Observed cut pot roast date marked on 10/10 to be discarded on 10/12 in the walk in cooler. PIC discarded it. Observed unopened bag of pot roast thawing in the walk in cooler with thawing date and cold holding at 41F or below. Observed salad mix in the salad table cold holding at 41F or below and with proper date marking.
PIC stated no employee reported being sick or was working while being sick and the facility had a verifiable employee health policy at the time of inspection.
Did not observe any violation related to the complaint. Reviewed proper thawing, date marking and disposition, cooking, hot and cold holding procedures with PIC.
