3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Food observed in the reach in freezers and reach in coolers were not properly covered . To prevent cross contamination food shall be covered. Observed food that was not properly protected from contamination by separation, packaging, and segregation.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical TCS foods were not being held at the proper temperature. Observed brocoli sitting out on the prep table. To prevent foodborne illness all TCS foods shall be kept at 41 degrees or less.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.

3717-1-03.4(C) / Thawing - temperature and time control.
Observed soups thawing in the wash sink. Foods shall be thawed under running water in a proper prep sink. TCS foods were not properly thawed.
TCS food shall be thawed as required in this rule.
3717-1-04.5(A)(2) / Cleanliness of food-contact surfaces of cooking equipment and pans.
Observed dirt on the hand washing sink, crumbs behind the toaster, TCS food on the prep table. The reach in coolers and freezers had debris on the bottom shelf. To prevent cross contamination surfaces shall be cleaned to touch and feel..
To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.
