Critical The person in charge was unable to demonstrate proper knowledge of food safety and prevention in the need for use of the 3 compartment sink, using sanitizer, proper thermometer sanitation and calibration.

Critical Corrected During Inspection Food thermometers are not accurate to plus or minus one degree C, or plus or minus two degrees F in the intended range of use. Thermometer used for checking roller foods was not accurate.
Food temperature measuring devices that are scaled only in Celsius or dually scaled in Fahrenheit and Celsius shall be accurate to plus or minus one degree Celsius or that are scaled only in Fahrenheit shall be accurate to plus or minus two degrees Fahrenheit.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Critical There is no test kit available for measuring the concentration of the sanitizer.
A test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Correct By: 04-Jun-2014

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment is not approved by a recognized testing agency. This firm has a new freezer and microwave that is not commerical grade, also there is a chest freezer that is non-commercial.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. ALL new equipment shall be commericial grade.
3717-1-04.4(F)(2) / Warewashing sinks - cleaning and sanitizing.
Corrected During Inspection The warewashing sink was not properly cleaned and sanitized. Warewashing sink was not being used except for damage storage.
If a warewashing sink is used to wash wiping cloths, wash produce, or thaw food, the sink shall be cleaned and sanitized before and after each time it is used to wash wiping cloths, wash produce, or thaw food. Correct By: 04-Jun-2014
