Critical Corrected During Inspection Observed eggs to be stored above ready-to-eat food in the walk-in cooler during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. Employee placed eggs in proper spot during the time of inspection.

Critical Repeat Corrected During Inspection Observed 3-bay sink to not reach required sanitization levels during the time of inspection. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Employee prepped new sanitizer water that reached required ppm during the time of inspection.

Corrected During Inspection Did not observe manager certificate in the facility during the time of inspection. Facility does not have an employee with manager certification in food protection. Printed put the certificate we have on file during the time of inspection.

Observed hand sink at bar to be inconveniently placed for hand washing during the time of inspection. Handwashing sink(s) are not conveniently located as specified in rule.

Corrected During Inspection Observed TCS food to be submerged in water but not under constant running water during the time of inspection. TCS foods not properly thawed. PIC placed packaged TCS items in container large enough to fit them and placed them under constant running water during the time of inspection.

Observed outside thermometer for walk-in cooler to be entirely missing during the time of inspection. Utensils, thermometers, and/or pressure gauges not in good repair or calibrated.

Repeat Observed cooking liquids and granulated seasonings at the grill to not have labels on their containers during the time of inspection. Working food containers not properly labeled.
