Critical Corrected During Inspection PIC verbalized during the inspection that in-use pizza cutters get washed/changed out once a day; based upon the store operation hours, this exceeds 4 hours. PIC was corrected during the inspection and reminded to have in-use utensils washed every 4 hours. Equipment and utensils contacting TCS food not cleaned every four hours.

Critical Corrected During Inspection Observed cheesecake filling sitting out for about 25 minutes after use. PIC placed the cheese cake filling back in the refrigerator during the inspection and was reminded to place cold held items back in the refrigerator immediately after use. TCS foods not being cold held at the proper temperature.

Critical Repeat Corrected During Inspection Observed the quat sanitizer dispensor dispensing sanitizer below the approved concentration. The sanitizer was remade during the inspection by hand-mixing the sanitizer with water to the approved concentration. PIC will continue having employees hand-mix the sanitizer until the dispensor has been repaired. Unapproved chemical sanitizer used on food contact surfaces.

Observed some of the nonfood-contact surfaces of the pizza sauce containers and lids scratched/damaged. PIC was advised to order new containers and discard the damaged ones. Nonfood-contact surfaces not easily cleanable.

Observed a torn gasket on the prep cooler. Equipment components are not intact, tight or properly adjusted.

Corrected During Inspection Observed the facility without any sanitizer test strips. PIC was given some test strips during the inspection and was advised to order more. No sanitizer test kit available.
