3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Observed pulled pork in the make table without date marking at the time of inspection. PIC stated it was prepared 8/15/21 and put proper date mark on. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection Observed no towels or drying device at the handwashing sink behind bar at the time of inspection. PIC placed paper towels in the dispenser.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed handwashing sink in womens bathroom water below 100°F at the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Observed missing internal thermometer in the two door cooler by the grill at the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed torn gaskets on the warmer by the fryers, and the make table at the time of inspection. Equipment components are not intact, tight or properly adjusted.

3717-1-04.1(O) / Equipment openings - closures and deflectors
Observed misisng lid to ice machine by soda fountain replaced by cardboard at the time of inspection. PIC stated he was looking to find a proper lid for the ice machine but has not found one yet. Equipment openings, closures, and deflectors not designed as required.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Observed a build up of debris on the gaskets of the euipment and on the bottom of the make table at the time of inspection. Non-food contact surfaces of equipment are unclean.
