Critical Corrected During Inspection PIC was unable to explain the proper cooling procedure for the facility. Explained the proper cooling process to the PIC and ensured she educated her staff of the process. PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating.

Critical Corrected During Inspection Observed raw bacon stored on top of ready to eat lettuce at the time of inspection. PIC moved bacon to be stored with the rest of the raw bacon. Food not properly protected from contamination by separation, packaging, and segregation.

Repeat Observed a damaged door sweep on the back service door at the time of inspection. Outer opening not protected.

Corrected During Inspection Observed coffee filters not stored to prevent contamination. PIC placed lid over the coffee filters. [52] Improper storage of single-service and single-use articles.

Observed torn gasket on the front counter reach in cooler. Equipment components are not intact, tight or properly adjusted.

Observed the upright freezer to have ice build up at the time of inspection. Non-food contact surfaces of equipment are unclean.
