3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Repeat Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed the hand sink by the kitchen area with food debris and needing cleaning. PIC had had employee cleaned it.

Comments
Complaint stated that the facility leaves dirty dishes from previous days in the sink with water and piled on the floor. Complaint also stated that waitresses and cook do not wash their hands after a smoke break and before returning to their tasks. Complaint stated there is no hand washing sink in the the kitchen area and the person doing the dishes will handle dirty dishes and then handle clean dishes without hand washing. Complaint also stated that there was no hand soap in the kitchen area and that employees would need to go to the restroom to wash their hands.
We went to the facility and talked to the manager regarding the complaint. The manager stated that dishes are done throughout the day and per shift since the facility is opened 24 hours. The manager mentioned that in the evening, the cook is in charge of the dishes and when busy, there can be a pile of dirty dishes awaiting that are usually completed by the end of the shift. The manager also stated that all employees are required to wash their hands after their smoke break before returning to their tasks and when doing dishes. Observed equipped hand washing sinks that are conveniently located in the facility to allow proper hand washing (a hand sink in the serving area, a hand sink by the kitchen area and hand sinks in the restrooms).
Discussed with the manager about proper hand washing procedures and making sure that all hand washing sinks are always equipped. Also discussed with the manager about proper dishwashing procedure. Observed the hand washing sink by the kitchen area with food debris. Discussed the use of hand sink with the manager. Violation regarding the complaint are cited in this report.
