Critical Corrected During Inspection Observed shredded cheese scoop to be touching shredded cheese during the time of inspection. Food in contact with an unclean surface or linens. PIC removed scoop handle from cheese during the time of inspection.

VR 05 / Monitoring procedures not being followed
Corrected During Inspection Observed cheese to not have time sticker on it during the time of inspection. The facility's monitoring procedures are not being followed according to the HACCP plan or variance approval. PIC had recalled when cheese was put out and placed the appropriate time sticker on cheese during the time of inspection.
