3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed containers of pudding in the cooler in the kitchen that were supposed to be discarded on 8/31. Also observed containers of caesar pasta salad in the cooler at the cafeteria that were supposed to be discarded on 8/28 and 8/31. PIC discarded all out of date food items. Ready-to-eat, TCS food not properly discarded when required.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Observed dust build up on the fan covers of the small walk in cooler and on the fan covers of the 2 door cooler in the kitchen. PIC put in a work order to have them cleaned. Non-food contact surfaces of equipment are unclean.
