Critical The McCafe area was dirty at the time of inspection. The Frappe machine and the coffee machine next to it are soiled. There is an abundance of food debris on the units, underneath, and especially behind.

Critical A live cockroach was observed crawling around between the machines in the McCafe area. This was pointed out to the PIC.
The presence of insects, rodents, and other pests shall be controlled by routinely inspecting incoming shipments of food and supplies, and routinely inspecting the premises for evidence of pests, using methods such as trapping devices or pesticides, and eliminating harborage conditions. 3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris in and around the floor drain. This floor drain is located in between the soild units in the McCafe area.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Correct By: 05-Mar-2014

| The complaint was roaches crawling around the Frappe machine last night. Also, an employee was observed spitting up on the counter around 10:30 PM last night. The employee then wiped the counter with their hand. The McCafe area was inspected. The machines and floor drain in the McCafe area were dirty. A live cockroach was found crawling between the two machines The PIC voluntarily closed down the McCafe area until it was properly cleaned. The PIC was asked if they have an exterminator. The PIC said Ecolab comes monthly. However the only documentation that was available was an extermination slip from 4/22/13. The PIC called Ecolab and they told her they were last there on 2/13/14. I asked how often the soiled machines in the McCafe area were cleaned. She said the utensils are cleaned ever 4 hours and the machines are cleaned daily. When asked how they are the cleaned, the PIC said the machines are washed, rinsed, and sanitized. The PIC and inspector went over what needs cleaned. When questioned about the spitting incident, the PIC said she was there last night but working the back area. She said either the manager or employee on duty would have cleaned it up with a sanitizer cloth. The PIC said she is going to call Ecolab today to schedule another extermination. |
