3717-1-02.4(C)(10) / Person in charge: duties - ensure employees are properly sanitizing equipment and utensils
Critical The person in charge did not ensure that employees are properly sanitizing equipment or utensils because the dishwasher was not working.
To prevent contamination, the person in charge shall ensure that employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused.

3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Observed the handwashing sink near the dishwasher needing recauked.
Equipment that is fixed shall be installed so that it is spaced to allow access for cleaning, from adjoining equipment, walls, and ceilings a distance of not more than one thirty-second inch or one millimeter; or sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage; Counter-mounted equipment shall be installed to allow cleaning of the equipment and areas underneath and around the equipment as specified in this rule.

Repeat Observed an accumulation of ice build-up inside freezer #2. Equipment and/or components are not maintained in good working order.

Repeat Observed walk-in coolers that were not properly working. No TCS foods were being kept inside. Equipment and/or components are not maintained in good working order.

Observed two kettes not properly working. Equipment and/or components are not maintained in good working order.

3717-1-04.6(A) / Food-contact surfaces and utensils - sanitization required
When asking how the kettles are cleaned, the person-in-charged started, soapy water, rinise, sanitize, rinise. Sanitizer should not be rinised off.
Equipment food-contact surfaces and utensils shall be sanitized.
3717-1-04.6(C) / Hot water and chemical sanitizing - methods.
The dishwasher was not properly sanitizing dishes, ready 147F. Person-in-charge called to have it looked at. They will use paper products until it is fixed and will manually wash dishes.
To prevent pathogen growth, after being cleaned, food-contact surfaces and utensils shall be properly sanitized by a method approved in this rule.
3717-1-04.8(A) / Equipment and utensils - air-drying required.
Equipment and utensils are not being air dried.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed a handwashing sink without water at the required temperature in the inmate restroom.
To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet.
3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Repeat Observed no towels or hand drying device at the handwashing sink by the dishwasher.
To prevent contamination by hands, each handwashing sink or group of adjacent handwashing sinks shall beprovided with: Individual, disposable towels; a continuous towel system that supplies the user with a clean towel; a heated-air hand drying device; or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.
