Critical Corrected During Inspection Observed a trash can stored in front of the hand sink in the kitchen and a donut cart by the hand sink at the front making it not readly accessible. PIC moved the items. Handwashing sink not accessible.
3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed cream cheese and butter that are supposed to be refrigerated holding at 50f-60F in the cream cheese and butter cooler. PIC discarded them. TCS foods not being cold held at the proper temperature.
3717-1-03.2(D) / Food storage containers - identified with common name of food.
Observed a container of powder sugar and white sugar not labeled. Working food containers not properly labeled.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed the cream cheese and butter cooler holding between 50F-60F. PIC discarded all TCS food items and put a work order in for the cooler. Also observed condensation on the ceiling of the walk in freezer. Equipment components are not intact, tight or properly adjusted.

Corrected During Inspection Observed employee washing, sanitizing and then rinsing dishes. Reviewed with employee that dishes shall be washed, rinse, sanitized and then air dry. Utensils and/or equipment not properly rinsed.
