Did not observe a thermometer in the hot holding oven or the red warming unit on the serving line. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Observed a fan in the warewashing areas pointed to clean dishes. PIC moved the fan to a different location.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed an accumulation of dust build up on the hood grates. Non-food contact surfaces of equipment are unclean.

3717-1-05.4(H) / Toilet room receptacle - covered.
Did not observe a covered receptacle in the employee bathroom. No covered receptacle in women's restroom.

3717-1-05.4(F)(1) / Outside receptacles - tight fitting lids
Corrected During Inspection Observed the outside dumpster with one lid open during the inspection. PIC corrected on site.
