Follow-up inspection: For the cooling process, this facility will now place hot TCS foods (135 or higher) in shallow trays (2 inches or less) into the freezer. Every effort must be made to ensure that an internal temp of 70 degrees F or lower is reached before leaving for the day. These TCS foods will be kept in the freezer overnight.This will help deal with staffing time constraints. Previous violation corrected.
