Critical Repeat Corrected During Inspection Observed the concentration of a sanitizer bucket in the facility to be low. PIC had employee refill the bucket during the inspection with fresh santizier water. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness.

Repeat Corrected During Inspection Observed a large fan in the dish room pointed directly at the clean dishes. PIC moved the fan during the inspection. Equipment and utensils are not being air dried.

Observed the gasket on the walk in freezer to be torn during the inspection. Equipment components are not intact, tight or properly adjusted.
