The following violation(s) have been corrected since the last inspection.
3717-1-04.1(Y)/Temperature measuring devices.
The external thermometer that the kitchen staff uses to track the temperature of the walk-in freezer is reading incorrectly. The internal thermometer should be used instead.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit.
3717-1-04.4(A)(1)/Equipment - good repair and proper adjustment.
Observed the walk-in cooler at 44F. Proper temperature should be below 41F. The external and internal thermometer both read 44F. TCS food all measured 40F or less. TCS food was moved from walk-in cooler to reach in coolers. TCS can not be stored in walk-in cooler till the unit is fixed.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Correct By: 14-Dec-2015
