[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(7) / Person in charge: duties - ensure employees are properly cooking TCS foods.
Critical The person in charge did not ensure that employees are properly cooking TCS foods and/or using thermometers as required. A cooling chart was provided.
To prevent the growth of pathogens, the person in charge shall ensure that employees are properly cooking TCS food, through daily monitoring of cooking temperatures using appropriate calibrated temperature measuring devices.

3717-1-04(A) / Multiuse utensils and food contact surfaces - material characteristics.
Observed chipping paint off the storage shelves. These shelves are no longer easily cleanable.
To prevent contamination, materials that are used in the contruction of utensils and food contact surfaces may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be: Safe; durable, corrosion-resistant, and nonabsorbent; Sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
3717-1-05.1(I) / Service sink - number.
The mop water is currently being dumped down the toilet. The mop water should be dumped down the mop sink in the maintenance closet.
At least one service sink or one curbed cleaning facility equipped with a floor drain shall be provided and conveniently located as specified in this rule.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
Observed a leak at the dishwasher.
A plumbing system shall be properly maintained.
