Received a complaint in regards to uncooked chicken tenders. The complaint stated they ate there Sunday and was served a completely raw chicken finger. After discussion with the PIC and the staff members, they stated they were training a new employee during the time of the incident. The new employee hit the wrong button on the fryer and the chicken was not cooked all the way. The customer brought the chicken finger back to the staff and they remade the product to the correct temperature. During the inspection, I discussed with the PIC and the staff working that we need to ensure all product is cooked to at least 165F before serving. The PIC stated it was a mistake and was corrected at the time of the incident. I ensured they knew the proper cooking temperature for raw chicken, she stated 165F. During the inspection, she also dropped a chicken finger in the fryer, and we took a temperature of the final product, which reached 177F.
