Observed food in the tranlsen freezer and walk-in freezer not properly covered to prevent contamination.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed the fan guards in the walk-in cooler, the vent in the storage room and the vent in the food preparation area with visible build-up.
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed single service containers not properly inverted.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-06.2(E) / Handwashing signage.
Observed no handwashing sign posted at handwashing sink used by employees in the mens restroom.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.
3717-1-06.4(F) / Drying mops.
Observed a wet mop being stored in an empty mop bucket. Wet mops should be hung to air dry
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
