Critical Corrected During Inspection Observed the make table in the kitchen not holding food to the proper temperature. Ambient temperature was about 50F on the top part of the cooler and about 47F at the bottom part. Some food items had internal temperature at or below 41F and some food items above 41F. PIC stated food items in the cooler were prepared and put in the cooler not long ago. Food items were in the cooler for less than 4 hours. PIC moved them into another cooler and will monitor the cooler over the weekend to see if it gets to the right temperature. Otherwise, a work order will be put in. TCS foods not being cold held at the proper temperature.

Critical Corrected During Inspection Observed unlabeled spray bottle of water. PIC labeled it. Working containers of poisonous or toxic materials not properly labeled.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed handwashing sink in the kitchen, by the 3 bay and by the mop sink water below 100°F.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed gaskets were replaced in both reach in cooler but not in the make tabke. PIC stated they received the wrong one and called the company to send them other gaskets that will fit the make table. PIC stated gaskets shall be replaced by 11/23.
Also observed the make table not holding food at the proper temperature. PIC emptied the cooler and will monitor it to see if it gets to temperature. If, not a work order will e put in. Equipment components are not intact, tight or properly adjusted.
