There are two preparation tables that are wooden and being used. These shall NOT be used as a food prep surface. Unapproved food contact surfaces contained wood and/or wicker.
Because of deterioration and cleaning concerns, wood and wood wicker may not be used as a food-contact surface.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
The chemical dishwasher does not have a source to check that the sanitizer is working properly. There is no test kit available for measuring the concentration of the sanitizer.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-06.4(A) / Repairing.
Observed a leak above the dishwash machine. The physical facilities are not being maintained in good repair.
The physical facilities shall be maintained in good repair.
