Critical Corrected During Inspection PIC was unable to state time and temperature requirements for cooling and re-heating. PIC was re-trained on requirements. PIC unable to demonstrate knowledge of temperatures and times for cooling and reheating.

Critical Repeat Corrected During Inspection Observed incorrect concentration of sanitizer for manual warewashing. PIC determined there was an issue with the sanitizer dispensing system during the inspection and is using sanitizer tablets in the interim. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness.
