3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed sliced chicken sitting out on the counter in the bag at the time of inspection. PIC placed chicken in the rethermalizer to be cooked for service. TCS foods not being cold held at the proper temperature.

3717-1-04.1(Y) / Temperature measuring devices.
Did not observe an internal thermometer in the warming units at the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-05.4(O) / Using drain plugs.
Did not observe a drain plug in the dumpster at the time of inspection. No drain plugs in waste receptacle.

3717-1-05.4(F)(1) / Outside receptacles - tight fitting lids
Observed dumpster lid to be missing at the time of inspection. Outdoor refuse containers without tight fitting lids, doors, or covers.

3717-1-06.3 (C)(1) / Employee accommodations - designated areas
Corrected During Inspection Observed employee drink sitting on the food prep line. PIC threw drink away at the time of inspection.
