Critical Repeat Corrected During Inspection Observed food items with expired time at the time of inspection (shredded lettuce, slivered onions, leaf lettuce, jack cheese). PIC discarded all expired items and put out new ones with expiration times. Improper use of time as a public health control (4 hours).

Complainant stated getting food from this facility on 12/17 and got ill less than an hour after eating. Complainant purchased big Mac with fries.
Talked to the PIC about the complaint. PIC stated big mac is made with ground beef cooked to 155F or above, hot held at 135F or above and served with shredded lettuce, american cheese, pickles, slivered onions and dehydrated onions. Observed big mac beef patties hot holding at 135F or above at the time of inspection. Facility uses time in lieu for the toppings. Observed expired time on the lettuce and slivered onion. PIC discarded the expired items and put new ones out. Observed cooler where toppings (lettuce, onions, cheese...) are stored cold holding at 41F or below. A temperature log for 12/17 was provided at the time of inspection. PIC stated no employee reported being sick and the facility had an employee sick policy.
