Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed several cheese (Shredded mozzarela, chedar cheese, pepper cheese, Provolone...) that were date marked to be discarded on 4/8 and 4/14 in the dairy cooler. PIC voluntarly discarded them.
