[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed top row of chicken chunks in the prepcooler next to the grill to be reading 50 degrees farenhiet at the time of inspection. PIC stated they had only been out an hour but the lid to the prep cooler had been open since then. PIC placed them back in the walk in cooler. Inofrmed PIC to check the temperature to make sure it reaches the required temperature witihin the proper time frame and to not stack the meat so high as well as to close the lid when not in use. . TCS foods not being cold held at the proper temperature.

3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical Repeat Observed the dishwasher reading only 158 degrees Fahrenheit at the time of inspection. Data plate states it needs to be minimum of 180 degrees. Instructed PIC to use the three compartment sink in the mean time. PIC stated the repair company would be out today to fix the problem. Improper temperature of wash solution in mechanical warewasher.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Observed no thermometer in the walk in cooler at the time of inspection. PIC placed one in there. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed torn gaskets on the prep table at the time of inspection. Equipment components are not intact, tight or properly adjusted.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed missing/damaged coving tiles between the warewashing area and the kitchen at the time of inspection. Floor and wall junctures not properly coved or closed and/or floor drains not provided.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Observed Alto-Shaam warmer in the dry storage area that is not in use at the time of inspection. PIC stated they are waiting on corporate to come pick it up. Unnecessary or nonfunctional items and /or litter on premises.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Observed mop being stored in the mop sink at the time of inspection. PIC hung up the mop. Mops must be hung up to dry properly. Mops dried improperly.

Complainant ordered hot wings and became ill. PIC walked through all processes related to preparing the hot wings. Observed one row of chicken stacked too high in the prep-cooler that was reading 50 degrees Fahrenheit and those stored underneath were reading within proper temperature. PIC stated that pan was brought to the prep cooler out of the walk in cooler only an hour ago. Informed PIC to place the top row back in the walk in and make sure it reaches proper temperatures within the required time frame and that the prep cooler should not be packed that high. Also informed the PIC they need to close the lid of the prep-cooler when not in use.
Comments related to the Critical Control Point Inspection (Item 35) are listed below. Note: Positive observations are indicated by the element number and the letter P.
II - P - Good Hygienic Practices: Food employee was demonstrating good hygiene practices.
I - P - Employee Health: The person in charge properly applies restrictions and exclusions for ill employees.
